Our Story
Origins
Opened in 2002 by Chef Timothy Widrick, Edge Restaurant took the Lehigh Valley by storm, impressing its customers with fresh, unique, New American cuisine, and top-notch customer service. Chef Widrick and his family took pride in serving the Lehigh Valley at Edge Restaurant, using their passion for food, great service, and great drinks to bring family and community together.
Searching for years to expand to another location, ownership finally saw their opportunity in 2020 and opened SURV Restaurant in Forks Township. The birth of SURV also gave birth to Lotus Restaurant Group, an ownership group comprised of Chef Timothy Widrick, Karen Widrick, Spencer Cobb, and Carissa Cobb. A symbol of rebirth, unwavering faith, and tenacity, the lotus flower was chosen to represent the Widrick and the Cobb’s commitment to food service excellence. At the center of not only the business, but the logo as well, is Chef Timothy Widrick represented by his knives, with the three lotus leaves representing Karen Widrick, Carissa Cobb, and Spencer Cobb.
Director of Operations, Master of Supplies, Karen Widrick is the heart and soul of day-to-day operations at Edge and SURV. From developing and coaching our wonderful staff, to ordering the supplies, Karen uses her passion and expertise to keep Edge and SURV operating smoothly.
Director of Business Development, Spencer Cobb is the mastermind behind business data analytics and restaurant growth and development. A fearless, strong leader, Spencer is always encouraging the team to dream big and think outside of the box. A master at adapting, evolving, and overcoming, Spencer is ready to see Edge and SURV through any situation.
Director of Guest Experience, Carissa Cobb, is the final lotus petal, bringing the entire dining experience together. Blending her unique creative vision and passion for superior service, Carissa looks to deliver a memorable experience to each and every guest at a Lotus Group restaurant.
